Gari Foto

Ingredients

Method
- Put the gari in a bowl, sprinkle with the warm water mixed with 1/4 tsp salt, and rub it lightly between your fingers until evenly damp but not soggy.
- Cover the moistened gari and let it rest while you make the stew.
- Heat the oil in a pan over medium heat and fry the sliced onion for 3 to 4 minutes until softened and fragrant.
- Add the scotch bonnet and tomato paste, then stir-fry for 1 minute to deepen the colour.
- Add the chopped tomatoes, seasoning cube, and remaining 1/2 tsp salt, then cook for 8 to 10 minutes until the tomatoes break down and the oil begins to show at the edges.
- Add the sardines with a little of their sauce or oil, breaking them into large pieces rather than mashing them completely.
- Push the stew slightly to one side, pour in the beaten eggs, and stir gently until they set into soft curds.
- Fold the eggs through the stew, then reduce the heat to low.
- Add the moistened gari a handful at a time, tossing well after each addition so the grains absorb the stew and turn evenly orange.
- Taste the gari foto, sprinkle in a little more water only if the grains feel dry, and cook for 1 to 2 minutes more.
- Stir in the spring onion and serve warm with sliced avocado on the side.
