Flammkuchen
A crisp, paper-thin German Flammkuchen topped with tangy Schmand, smoky Speck, and sweet onion. It comes from the oven blistered at the edges, best eaten hot from a wooden board.

Ingredients
- All-purpose flour or German type 550 flour200g, plus extra for dusting
- Lukewarm water100ml
- Neutral oil2 tbsp
- Fine salt1/2 tsp, plus a pinch for topping
- Schmand150g
- Freshly ground black pepper1/4 tsp
- Freshly grated nutmeg1 pinch
- Smoked streaky bacon or Bauchspeck80g, cut into small lardons
- Yellow onion1 medium, very thinly sliced
- Chives1 tbsp, finely chopped, optional
Method
- Place a baking stone or heavy baking tray in the oven and preheat to 250–275°C for at least 20 minutes.
- Mix the flour, lukewarm water, oil, and 1/2 tsp salt in a bowl until a firm dough forms.
- Knead the dough on a lightly floured surface for 5 minutes until smooth, then cover and rest for 20 minutes.
- Stir the Schmand with a pinch of salt, black pepper, and nutmeg until smooth.
- Divide the dough into 2 pieces and roll each piece as thinly as possible into an oval or rectangle on lightly floured baking paper.
- Spread the seasoned Schmand thinly over each dough base, leaving a narrow border around the edge.
- Scatter the sliced onion and Speck evenly over the top.
- Slide one Flammkuchen with its baking paper onto the hot stone or tray and bake for 7–10 minutes, until the edges are browned, crisp, and lightly blistered.
- Bake the second Flammkuchen in the same way.
- Sprinkle with chives if using, cut into pieces, and serve immediately while crisp.

Can I substitute Schmand if I can’t find it?
Yes. Mix crème fraîche, sour cream, or Greek yogurt with a little heavy cream to get a similarly tangy, spreadable topping. Avoid using plain yogurt alone unless it’s thick, or the base can turn watery.
How thin should I roll the dough, and how long does it take to bake?
