Ingredients
- Whole milk2 cups
- Rice flour3 tbsp
- Sugar3 1/2 tbsp
- Ground cardamom1/4 tsp
- Rosewater1 tsp
- Fine salt1 small pinch
- Unsalted pistachios, finely chopped1 tbsp
- Blanched almonds, finely chopped1 tbsp
Method
- Pour 1/2 cup of the cold milk into a small bowl and whisk in the rice flour until completely smooth with no lumps.
- Pour the remaining 1 1/2 cups milk into a small heavy saucepan and set it over medium-low heat.
- Add the sugar and salt to the saucepan and stir until the sugar dissolves and the milk is hot but not boiling.
- Whisk the rice flour mixture again, then slowly pour it into the hot milk while stirring constantly.
- Cook over low heat, stirring continuously with a wooden spoon or whisk, until the firni thickens to a smooth custard that coats the back of the spoon, about 8 to 10 minutes.
- Stir in the ground cardamom and rosewater, then cook for 1 more minute while stirring gently.
- Pour the firni into 2 small serving bowls and smooth the tops.
- Sprinkle with chopped pistachios and almonds while still warm.
- Let cool to room temperature, then refrigerate for at least 1 hour until chilled and softly set before serving.
