Method
- Place each chicken cutlet between plastic sheets and pound gently until evenly thin, about 1/2 cm thick.
- In a bowl, mix the grated onion with its juices, garlic, lemon juice, vinegar, cumin, coriander, paprika, black pepper, and salt.
- Coat the chicken well in the marinade, cover, and refrigerate for at least 1 hour, preferably 3 to 4 hours.
- Set up three shallow dishes: flour in one, eggs beaten with milk in the second, and breadcrumbs in the third.
- Lift each cutlet from the marinade, letting excess onion mixture fall away, then coat in flour, dip in egg, and press firmly into breadcrumbs.
- Rest the breaded chicken on a tray for 10 minutes so the coating adheres.
- Heat the oil in a wide frying pan over medium heat until shimmering but not smoking.
- Fry the cutlets in batches for 3 to 4 minutes per side, until deep golden and cooked through.
- Drain on a wire rack or paper towels, then serve hot with lemon wedges.
