  4. Pulse, scraping down often, until the mixture is finely ground and holds together when squeezed, but is not a smooth paste.
  5. Transfer the mixture to a bowl, cover, and refrigerate for 30 minutes to firm up.
  6. Stir the remaining 1/2 tsp baking soda into the chilled mixture just before frying.
  7. Mix the tahini, lemon juice, cold water, crushed garlic, and a pinch of salt until smooth and pourable to make tarator sauce.
  8. Shape the falafel mixture into small balls or patties, about 2 tbsp each, and press sesame seeds onto the outside.
  9. Heat the vegetable oil in a deep pot to 175°C.
  10. Fry the falafel in batches for 3 to 4 minutes, turning gently, until dark golden brown and crisp.
  11. Drain on a rack or paper towel and sprinkle lightly with salt while hot.
  12. Serve immediately with pita, tarator sauce, pickled turnips, tomatoes, cucumber, and fresh mint.
