  4. When the beans are collapsing, add 1/2 tsp salt and mash them in the pot with a wooden spoon until thick, smooth, and slightly coarse.
  5. Soak the dried peppers in hot water for 10 minutes, then drain.
  6. Roughly chop 1 onion and blend it with the soaked peppers using as little water as possible to make a coarse paste.
  7. Thinly slice the remaining onion.
  8. Heat the palm oil in a small pot over medium heat until it is hot and slightly clearer, but do not let it burn.
  9. Add the sliced onion and fry slowly, stirring often, until the onion is deep brown and caramelized, about 15 to 20 minutes.
  10. Stir in the pepper-onion paste and fry over medium-low heat, stirring frequently, until the sauce darkens, thickens, and the oil separates, about 25 to 30 minutes.
  11. Add the crayfish, iru, seasoning cube, and remaining 1/2 tsp salt, then fry for another 3 to 5 minutes.
  12. Taste and adjust salt, then spoon the mashed beans onto plates and generously top with the dark agoyin sauce.
  13. Serve hot with Agege bread if desired.
