Ingredients
- Long-grain white rice3/4 cup
- Chicken gizzards3 oz
- Chicken livers3 oz
- Ground pork4 oz
- Chicken stock1 3/4 cups
- Yellow onion, finely diced1/2 cup
- Green bell pepper, finely diced1/3 cup
- Celery, finely diced1/3 cup
- Garlic, minced2 cloves
- Vegetable oil or bacon drippings1 tbsp
- Bay leaf1
- Paprika1 tsp
- Dried thyme1/2 tsp
- Cayenne pepper1/4 tsp
- Freshly ground black pepper1/2 tsp
- Kosher salt3/4 tsp, plus more to taste
- Green onions, thinly sliced2
- Fresh parsley, chopped2 tbsp
Method
- Rinse the rice under cold water until the water runs mostly clear, then drain well.
- Put the chicken gizzards, bay leaf, and chicken stock in a small saucepan, bring to a simmer, cover, and cook for 30 minutes until the gizzards are tender.
- Remove the gizzards from the stock, finely chop them, and reserve the stock for cooking the rice.
- Finely chop the chicken livers until almost minced; this helps them melt into the rice and give the dish its classic dirty color.
- Heat the oil or bacon drippings in a heavy pot over medium-high heat, add the ground pork, and brown it well, breaking it into small pieces.
- Add the chopped gizzards and minced chicken livers, then cook for 4 to 5 minutes, stirring often, until the liver darkens and a browned fond forms on the bottom of the pot.
- Add the onion, green bell pepper, and celery, then cook for 6 to 8 minutes until softened and the vegetables pick up the browned bits.

- Add the drained rice and stir for 1 to 2 minutes so the grains are coated in the seasoned meat mixture.
- Pour in 1 1/2 cups of the reserved hot stock, scraping the bottom of the pot; add a little water if needed to make 1 1/2 cups liquid.
- Bring to a boil, reduce the heat to low, cover tightly, and cook for 18 minutes without lifting the lid.
- Turn off the heat and let the pot stand covered for 10 minutes.
- Fluff the rice with a fork, fold in the green onions and parsley, taste for salt and cayenne, and serve hot.
