  3. Add the sliced meat to the marinade, coat well, cover, and refrigerate overnight.
  4. Knead the mince and finely minced fat together until sticky, then mix in 1 tablespoon of the marinade from the bowl.
  5. Lay a large piece of plastic wrap on the counter and build a tight stack of marinated meat slices, spreading a very thin layer of the mince and fat mixture between some of the slices.
  6. Roll the stack firmly into a compact log, twisting the ends of the plastic wrap tightly, then refrigerate for 1 hour to set the shape.
  7. Freeze the wrapped log for about 3 hours, until very firm but still sliceable.
  8. Unwrap the log and shave it as thinly as possible with a sharp knife, cutting across the layers.
  9. Heat a cast-iron pan or flat griddle until very hot, then cook the döner shavings in small batches, spreading them in a single layer so the edges brown and the fat renders.
  10. Warm the lavaş or pide briefly on the same pan so it absorbs a little of the meat juices.
  11. Toss the sliced onion with parsley and sumac.
  12. Serve the hot döner in the warm bread with sumac onion, tomato slices, and pickled green peppers.
