- Extra Firm Tofu1 block (14 oz)
- Broccoli Florets2 cups

Method
- Press the tofu to remove excess water, then cut into cubes.
- Toss tofu cubes in cornstarch and pan-fry in oil until crispy and golden.
- Remove tofu, then stir-fry broccoli, bell peppers, and carrots in the same pan.
- Whisk together soy sauce, sesame oil, ginger, garlic, and brown sugar to make the sauce.
- Add the tofu back to the pan, pour over the sauce, and toss until thickened and coated.

Can I substitute firm tofu if I can’t find extra firm tofu?
Yes, but firm tofu is softer and will break more easily. Press it longer, cut larger cubes, and toss very gently in cornstarch. For the crispiest result, extra firm tofu is still the best choice.
How long does it take to cook the tofu and vegetables?
Plan on about 25 to 35 minutes total. Pressing the tofu takes the longest, but active cooking is quick: 8 to 12 minutes for crisping the tofu and 5 to 7 minutes for the vegetables and sauce.
Why isn’t my tofu getting crispy in the pan?
The most common causes are too much moisture, crowded pan, or not enough heat. Press the tofu well, coat lightly in cornstarch, and fry in a hot pan with enough oil so the cubes don’t steam.
