Ingredients
- Sushi Rice2 cups
- Rice Vinegar3 tbsp
- Nori Sheets4 sheets
- Imitation Crab6 sticks
- Avocado1, sliced
- Cucumber1, julienned
- Sesame Seeds2 tbsp
Method
- Rinse the sushi rice until the water runs clear, then cook it in a rice cooker. Once cooked, mix in rice vinegar, sugar, and salt while fanning the rice to cool it down.
- Place a sheet of nori on a bamboo rolling mat covered with plastic wrap. Spread a thin layer of sushi rice over the nori, sprinkle with sesame seeds, and flip it over so the rice is facing down.
- Arrange crab sticks, avocado slices, and cucumber strips horizontally across the center of the nori.
- Roll the mat tightly to form a cylinder, pressing gently to shape the roll.
- Slice the roll into 6-8 pieces using a sharp, wet knife.
Common questions
Can I substitute real crab, and if so how should I use it in a California roll?
Yes. Use cooked lump crab or crab salad in the same amount as imitation crab. If the crab is very moist, drain it well and mix lightly with a little mayonnaise only if you want a richer roll.
How long does it take to make California rolls from start to finish?
Plan on about 45 to 60 minutes total. Rice cooking and cooling takes the longest, usually 25 to 35 minutes, while rolling and slicing the sushi itself takes about 15 to 20 minutes once the rice is ready.
What are the most common mistakes when making California rolls?
Using rice that is too wet or too hot, overfilling the roll, and not tightening the mat enough are the biggest issues. Also keep your knife wet when slicing, or the rice will stick and tear the roll.
How should I store leftover California rolls?
Store leftovers in an airtight container in the refrigerator for up to 1 day. The rice dries out quickly and avocado browns, so they are best eaten the same day. Do not freeze, because the texture becomes mushy.
What is the best way to serve California rolls?
Serve them chilled or at cool room temperature with soy sauce, pickled ginger, and wasabi if desired. Slice them just before serving for the cleanest look, and wipe the knife between cuts for neat pieces.
