Cholado
A Valle del Cauca-style cholado layers finely shaved ice with bright tropical fruit, mora syrup, and sweet condensed milk. It is served tall and cold, with the fruit juices melting into the ice as you eat.
Ingredients
- Finely shaved ice or very finely crushed ice4 cups

- Lulo pulp or passion fruit pulp1/4 cup
- Fresh lime juice1 teaspoon
- Powdered milk or Milo2 tablespoons

Method
- Chill two tall glasses or plastic cups in the freezer while you prepare the fruit.
- Combine the mango, papaya, pineapple, strawberries, banana, apple, lulo pulp, and lime juice in a bowl.
- Spoon 1 tablespoon of mora syrup into the bottom of each chilled glass.
- Add a loose layer of shaved ice to each glass, filling each about one-third full.
- Spoon a generous layer of the mixed fruit over the ice in each glass.
- Drizzle each glass with more mora syrup and a spoonful of condensed milk.
- Add more shaved ice, mounding it slightly above the rim of each glass.
- Top each cholado with the remaining fruit, the remaining condensed milk, and the remaining mora syrup.
- Sprinkle each serving with powdered milk or Milo.
- Finish each glass with a wafer cookie and a cherry, then serve immediately with a long spoon and straw.
Common questions
Can I substitute the mora syrup or lulo pulp if I can't find them?
Yes. Use a good red berry syrup, grenadine, or strawberry syrup for mora. For lulo, passion fruit pulp is the closest substitute; mango passion fruit nectar also works. Keep it tart so the cholado stays balanced.
How far ahead can I prep the fruit and ice?
Prep the fruit up to 4 hours ahead and keep it covered and chilled. Freeze the glasses ahead of time, but assemble the cholado only right before serving so the ice does not melt and water down the layers.
