Chana Chaat

Ingredients
- Dried chickpeas3/4 cup
- Wateras needed
- Baking soda1/4 tsp
- Potato, boiled and diced1 medium
- Red onion, finely chopped1 small
- Tomato, chopped1 small
- Green chillies, finely chopped1 to 2
- Fresh coriander, chopped1/4 cup
- Fresh mint, chopped2 tbsp
- Tamarind chutney3 tbsp
- Lemon juice1 tbsp
- Chaat masala1 1/2 tsp
- Roasted cumin seeds, crushed1 tsp
- Red chilli powder1/2 tsp
- Black salt1/4 tsp
- Saltto taste
- Papri, lightly crushed1/2 cup
Method
- Rinse the dried chickpeas, soak them overnight in plenty of water, then drain.
- Place the soaked chickpeas in a pot with fresh water and baking soda, then boil until very tender but still holding their shape, about 1 hour to 1 hour 15 minutes.
- Drain the chickpeas and let them cool until warm or room temperature.
- In a mixing bowl, combine the chickpeas, boiled potato, red onion, tomato, green chillies, coriander, and mint.
- Add tamarind chutney, lemon juice, chaat masala, crushed roasted cumin, red chilli powder, black salt, and salt.
- Mix gently but thoroughly, lightly pressing a few chickpeas with the spoon so the masala and chutney cling to the chaat.
- Taste and adjust with more lemon juice, chaat masala, or salt if needed.
- Transfer to serving bowls and top with crushed papri just before serving.
