Causa limeña
A chilled Peruvian potato causa layered with ají amarillo, lime, creamy chicken, avocado, egg, and black olives. The potato is mashed while hot and seasoned until bright, silky, and tangy, just as it is served in Lima.
Ingredients
- Papa amarilla or Yukon Gold potatoes600g
- Ají amarillo paste2 tbsp
- Fresh lime juice3 tbsp
- Neutral oil2 tbsp
- Salt1 tsp, plus more to taste
- Cooked chicken breast, shredded180g
- Mayonnaise3 tbsp
- Red onion, very finely diced2 tbsp
- Avocado, sliced1/2 large
- Hard-boiled egg, sliced1

Method
- Place the unpeeled potatoes in a pot, cover with cold salted water, and boil until completely tender, about 25 to 30 minutes.
- Drain the potatoes, peel them while still hot, and pass them through a potato ricer or mash very finely until smooth.
- While the potato is still warm, mix in the ají amarillo paste, lime juice, oil, and salt, kneading gently by hand or with a spoon until the mash is bright yellow, smooth, and holds together.

- In a bowl, mix the shredded chicken with mayonnaise, red onion, and a small pinch of salt until creamy but not wet.

- Add a layer of sliced avocado, then spoon in the chicken filling and press it gently to level it.
