  6. Pour in the white wine and enough water or fish stock to come about one-third of the way up the ingredients; do not submerge them.
  7. Cover the pot and bring to a gentle simmer over medium heat.
  8. Reduce the heat to low and cook for 20 to 25 minutes, shaking the pot gently by the handles once or twice instead of stirring.
  9. Check that the potatoes are tender and the fish flakes easily; simmer uncovered for a few minutes if the broth needs to concentrate.
