  1. Rinse the brown beans, cover them with plenty of cold water and soak for 8 to 12 hours.
  2. Drain the beans and put them in a soup pot with 900ml fresh water, the bay leaf and the smoked bacon piece.
  3. Bring to a gentle boil, skim off any foam, then simmer partially covered for 60 to 75 minutes until the beans are tender.
  4. Lift out the bacon, dice it, and set it aside; discard the bay leaf.
  5. Add the onion, leek, carrot, celeriac, potato and savory to the pot and simmer for 20 to 25 minutes until the vegetables are soft.
  6. Mash part of the beans and vegetables against the side of the pot with a spoon, or blend one ladleful and stir it back in, so the soup thickens but stays rustic.
  7. Return the diced bacon to the soup and add the rookworst whole or in thick slices.
  8. Warm gently for 10 minutes without boiling, then season with salt and black pepper.
  9. Stir in the chopped celery leaves or parsley just before serving.
