Ingredients
- Fresh bhindi (okra)350g
- Neutral oil3 tbsp
- Onion, thinly sliced1 medium
- Tomatoes, finely chopped2 medium
- Ginger-garlic paste1 tbsp
- Green chilies, slit2
- Cumin seeds1/2 tsp
- Turmeric powder1/4 tsp
- Red chili powder1 tsp
- Coriander powder1 1/2 tsp
- Cumin powder1/2 tsp
- Salt3/4 tsp, or to taste
- Dried mango powder or lemon juice1/2 tsp amchur or 1 tsp lemon juice
- Garam masala1/4 tsp
- Fresh coriander, chopped2 tbsp
Method
- Wash the bhindi, then dry it completely with a towel; trim the tops and cut into 1-inch pieces.
- Heat 2 tbsp oil in a karahi or wide pan over medium-high heat and fry the bhindi for 7 to 9 minutes, stirring gently, until the slime disappears and the edges look lightly blistered.
- Remove the bhindi to a plate and set aside.
- Add the remaining 1 tbsp oil to the same pan, then add cumin seeds and let them sizzle for a few seconds.
- Add the sliced onion and cook for 6 to 8 minutes until golden at the edges.
- Stir in ginger-garlic paste and cook for 1 minute until the raw smell fades.
- Add tomatoes, green chilies, turmeric, red chili powder, coriander powder, cumin powder, and salt.
- Cook the masala on medium heat for 8 to 10 minutes, stirring often, until the tomatoes soften and the oil begins to separate.
- Return the fried bhindi to the pan and fold it gently into the masala without breaking it.
- Cover and cook on low heat for 5 to 7 minutes, shaking the pan once or twice instead of stirring too much.
- Sprinkle in amchur or lemon juice and garam masala, then cook uncovered for 1 minute.
- Finish with fresh coriander and serve hot with roti, paratha, or plain basmati rice.
