Ingredients
- Boneless mutton or lamb, cut into 3 cm cubes450g
- Mutton fat or lamb fat, cut into small pieces50g
- Plain yogurt, well whisked3 tbsp
- Raw papaya paste1 tbsp
- Ginger garlic paste1 tbsp
- Lemon juice2 tbsp
- Green chilli paste1 tsp
- Roasted cumin seeds, crushed1 tsp
- Roasted coriander seeds, crushed1 tsp
- Black pepper, freshly crushed1 tsp
- Red chilli flakes1/2 tsp
- Salt1 tsp
- Mustard oil or neutral oil1 tbsp
- Ghee, for basting1 tbsp
- Onion rings, for serving1 small onion
- Lemon wedges, for serving2
- Fresh coriander, chopped, for serving2 tbsp
Method
- Dry-roast the cumin and coriander seeds in a small pan until fragrant, then crush them coarsely.
- Mix yogurt, raw papaya paste, ginger garlic paste, lemon juice, green chilli paste, crushed cumin, crushed coriander, black pepper, red chilli flakes, salt, and oil in a bowl.
- Add the mutton cubes and fat pieces, massage the marinade into the meat, cover, and refrigerate for 4 hours.
- Remove the meat from the fridge 30 minutes before cooking so it is not ice-cold when it goes on the fire.
- Thread the marinated meat onto metal skewers, placing a small piece of fat between some of the meat cubes.
- Prepare a medium-hot charcoal fire and place the skewers over the coals.
- Grill the tikka for 15 to 18 minutes, turning often and basting lightly with ghee, until the edges are charred and the meat is tender and cooked through.
- Rest the skewers for 5 minutes, then slide the tikka onto a platter.
- Serve hot with onion rings, lemon wedges, fresh coriander, naan, and green chutney.
