Areekah
Areekah is a comforting Saudi dish from the southern highlands, made by cooking whole wheat dough, then kneading it while hot with dates, ghee, and honey. It is served warm with a glossy well of samn in the center.
Ingredients

Method
- Mix the whole wheat flour and salt in a bowl, then add the warm water gradually and knead until you have a soft, slightly sticky dough.
- Cover the dough and let it rest for 10 minutes so the flour hydrates.
- Heat a heavy skillet or tawa over medium-low heat and lightly grease it with a little ghee.
- Pat the dough into a thick round, about 2 cm thick, and place it in the skillet.
- Cover and cook for 10 to 12 minutes, then flip and cook the other side for 8 to 10 minutes, until the bread is cooked through, firm, and lightly browned.
- While the bread is still very hot, tear it into pieces and place it in a large bowl or traditional wooden bowl.
- Add the pitted dates and 2 tablespoons of ghee, then pound or knead firmly until the bread and dates become a warm, coarse, cohesive mash.
- Shape the areekah into a mound on a serving plate and make a shallow well in the center.
- Warm the remaining 1 tablespoon ghee with the honey just until fluid, then pour it into the center well.
- Garnish with extra dates and serve immediately while warm.
