Ingredients
- Roasted corn flour1 cup

Method
- Rinse the smoked fish quickly, remove any large bones, and break it into generous pieces.
- Blend the onion, tomatoes, scotch bonnet, garlic, and ginger with 1/2 cup of the water until smooth.
- Pour the blended mixture into a pot and simmer for 8 minutes to cook out the raw taste.
- Stir in the palm fruit concentrate and the remaining 2 1/2 cups water until smooth.
- Add the prekese, smoked fish, crab pieces, dried shrimp powder, and a little salt.
- Simmer the palm nut soup uncovered for 25 to 30 minutes, stirring occasionally, until it tastes rounded and a little red oil rises to the surface.
- Remove the prekese and taste the soup for salt and pepper.
- Lower the heat and scoop out about 1/2 cup of the thin soup into a bowl to loosen the aprapransa later if needed.
- Sprinkle the roasted corn flour into the simmering soup a little at a time while stirring firmly with a wooden spoon.
- Keep stirring and folding the mixture over medium-low heat for 8 to 10 minutes until it becomes thick, glossy, and smooth with no dry flour patches.
- Add the reserved soup a spoonful at a time if the aprapransa becomes too stiff before the corn flour is fully cooked.
- Drizzle in the palm oil, stir for 1 more minute, and serve hot with the crab and smoked fish arranged on top.
