- Cauliflower1 medium head
- Potatoes2 large
- Turmeric Powder1 tsp

- Heat oil in a pan and add cumin seeds. When they splutter, add chopped onions and sauté until translucent.
- Add ginger, green chilies, and turmeric powder. Stir briefly.
- Add potato cubes and cauliflower florets. Toss well to coat with the spices.
- Cover and cook on low heat for 15-20 minutes, stirring occasionally, until vegetables are tender but not mushy.
- Sprinkle garam masala, dry mango powder (amchur), and fresh coriander. Toss on high heat for 1 minute and serve.
