Alheira de Mirandela
A rustic Trás-os-Montes plate of crisp-skinned alheira, golden fried potatoes, garlicky greens, and a soft fried egg. The sausage is cooked gently so its smoky bread-and-meat filling stays creamy inside.
Ingredients

Method
- Peel the potatoes, cut them into thick batons, rinse in cold water, and dry very well with a clean towel.
- Bring a pot of salted water to a boil, add the grelos or cabbage greens, and cook for 5 to 7 minutes until tender but still green.
- Drain the greens thoroughly and squeeze out excess water.
- Warm 2 tablespoons of olive oil in a pan, add the sliced garlic, and cook gently until fragrant and lightly golden.
- Add the drained greens to the garlic oil, season with salt and pepper, and sauté for 3 to 4 minutes; keep warm.
- Heat neutral oil in a deep pan to 160°C and fry the potatoes for 5 to 6 minutes until softened but not browned.
- Lift out the potatoes, raise the oil to 180°C, and fry them again until crisp and golden; drain and season with salt.
- Prick each alheira lightly in 2 or 3 places with a toothpick so it does not burst.
- Heat 1 tablespoon of olive oil in a wide frying pan over medium-low heat and cook the alheiras for 4 to 5 minutes per side, turning carefully, until the skin is browned and crisp.
- In a separate small pan, fry the eggs in a little oil until the whites are set and the yolks remain soft.
- Serve each alheira whole with fried potatoes, sautéed greens, and a fried egg on top or alongside.
